Mexican Cuisine
If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.
Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.
Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.

This was the first time we had been back to Carlos' since they reopened. The margaritas were excellent. I had the La Cena which was a tamale, an enchilada, a taco, plus beans, rice & a guacamole salad. My husband had the 5 tamales with chili. Both dishes were very good. I couldn't eat all of mine so I had to get him to help me finish it. The flavor of the food was so good. I told him it was just good comfort food. The portions were very generous. Plus our server was very attentive, making sure we always had everything we needed. This was a very pleasant dining experience and we will definitely be back!

so glad this place has reopened. it was one of our favorites for a long time then closed for awhile. now it's back- delicious food - we always go for the traditional; not so much the seafood/mexican fare. anyway, the enchiladas were great as were the tacos and tamales. very tasty. the guacamole is unusual in that it is sweet - not my taste but my husband enjoyed it. the service was really very nice and personal - family business and it shows. carlos was seen delivering some food to tables himself and checking on everyone. so unusual in this day of chain restaurants. try it - you won't be sorry!!

At first glance inside, it's very dark and ceiling has a funky look to it. Our waiter and owner, Carlos, was very nice. He brought some red sauce that appeared to be fresh salsa. This was like no salsa that I've ever had before. It consisted of mostly salt and garlic with a little tomatoes, peppers and cilantro. I wanted to ask him if he had tasted this. I ordered a shrimp and crab chille relleno with beans and rice. The shrimp and crab was more like an Alfredo sauce with no sign of a shrimp and very little crab meat. Not what I expected. The beans were decent and the rice was the best part of the experience. I hate to give a bad review because Carlos was so nice, but this is not a people review. The food was not good. I eat Mexican food all over the U.S. and this wasn't good.

Wonderful Flavors, Great Service. This was a real treat for lunch today. Started with the best salsa in Baton Rouge. Good heat and fresh taste. Had the tamales with chili for appetizer and we were all impressed. When our entrees arrived, they were beautifully plated and once again we were impressed with the quality and quantity. Seafood entrees were very tasty and traditional entrees were well seasoned. By far the best Mexican food in Baton Rouge. Can't wait to eat my way through the menu! Can't end without mentioning the service. Everything was timed perfectly and the server was very attentive. The type of flawless service you expect in from higher end restaurants.

TERRIBLE HORRIBLE NIGHTMARE FIASCO WORST... ANY OTHER SYNONYM YOU COULD THINK OF This establishment was absolutely terrifying. The waitstaff consisted of a 10 YEAR OLD CHILD!!!! And he was one server between about 15+ tables. EVERYTHING WE ORDERED CAME OUT WRONG! (some of the things we ordered didn't come out AT ALL!) We had margarita and water spilled on us... We disputed our bill with the crooked old man who owned the place and he was very, very rude about it... didn't care what his prices were... it was a "you pay what i tell you to pay" kind of place... guessing he was cartel? I strongly, strongly recommend going somewhere where the food is better, environment is subtle and less scary..... Try La Carreta, Superior Grill, or Ninfa's..... If you come here, you may become an accomplice ;-)

The problem with Baton Rouge mexican restaurants is a lot of it tastes the same. I thought Carlos' had wonderful, unique flavors. I loved the salsa with carrots added... and it was really spicy and delicious. The margaritas were nice too. Can't go wrong with their entrees. Check it out.

Had been a long time since we visited Carlo's. Has always been great, but now Carlos Jr. Is the chef. Fabulous meal , we eat Mexican at least once a week and this was by far the best we have had in a long time . It's kind of out of the way but defiantly worth the trip. Was great to see Mr. Carlos relaxing in his recliner. Great service and great meal , you can't ask for more than that !

Decent food, but salsa was way to salty. Very dark interior decor, I did not feel comfortable here. Good service, I think I was served by Carlos's young grandson. I think with an update in decor this restaurant would do OK. Right now it is just too depressing inside.

Awesome food and excellent service!!! It's a little out if the way for us but we always find time to cross town for this restaurant! We have never been disappointed. Family owned for 37 years, they got it right!
